Founded in 2010, Thistledown is a South Australian winery that sources its grapes from selected winemakers in the area’s premier regions (Barossa Valley, McLaren Vale, Adelaide Hills, and Langhorne Creek). Founders and Masters of Wine Giles Cooke and Fergal Tynan, work with Peter Leske to produce exceptional, small-batch wines that are expressive of Australia’s great terroirs. The Grenache grapes are hand-picked from a vineyard with vines planted in 1952 and trained in a bush style on sandy soils. The wine is fermented in cement and then aged in oak and cement for approximately 10 months before bottling. The result is an extremely expressive wine that reflects the characteristics of the site of origin. Thistledown Sands of Time Grenache is a powerful and intense wine, but never opulent with delicious aromas of ripe red fruit and blood orange, floral notes of lilac, and hints of rose water and violets. On the palate, it is structured and consistent, juicy and lively. It has a well-integrated tannic backbone and a smooth texture. The finish is long, elegant, and tasty. It’s an absolute must-try with Asian duck and pork, or pork tacos.

Thistledown is an Australian winery, founded by English-born Masters of Wine Fergal Tynan and Giles Cooke who chose some of the most renowned wine regions in the south of the country to make their wines. The Grenache grapes come from a site of extraordinary quality, located on a hill in the Clarendon sub-region of McLaren Vale, farmed for 3 generations by the Smart family. The 100-year-old vines are trained in a bush style. Its name is a tribute to Bernard Smart, who understood and preserved this beautiful vineyard, whose exceptional fruit we can still enjoy today. After spontaneous fermentation with indigenous yeasts, the finished wine rests in 300-litre barrels (80% of which are used). The Charming Man is a wonderful example of Australian Grenache. It has a deep and complex aromatic profile, with notes of violet and black cherry, raspberry, and ripe blackberries, followed by spice and minerality. On the palate, it is concentrated, fruity, powerful, and elegant with soft tannins and a velvety texture. It is rich and lively with a long finish that recalls spicy notes. Leave it for a few years in the cellar, or open a bottle now with beef chili or pork chops.

The company focuses primarily on artisanal wines, with a special focus on Grenache (especially from old vines), but also produces excellent Chardonnay and Shiraz. Made in just under 2,600 bottles, the Fool on the Hill is a Grenache-based red from Joel Mattschoss's Trial Hill vineyard, a stunning hillside site overlooking the Barossa Valley. Here, the old, bush-trained vines are isolated at approximately 500 meters above sea level and produce grapes with great concentration and minerality. After the morning harvest, fermentation occurs spontaneously with 20% whole bunches in concrete pyramids. The finished wine then ages for 11 months in oak. On the nose, the wine reveals an intense aromatic profile with ripe notes of flowers and red fruits (particularly cherry, pomegranate, and currant) and spicy and mineral hints. On the palate, it is soft and rounded, full-bodied and expressive. It features fine, well-integrated tannins and a distinctive minerality. The finish is long and fruity. It is a wine capable of cellaring well for several years, but can already be enjoyed with pork belly or roast mallard duck.
