In the vineyard the use of chemical herbicides and pesticides is avoided along with dry farming to concentrate the flavours and aromas in the grapes. The grapes are allowed to dry out slightly on the vine before harvest to add extra complexity and richness and they are then harvested by hand. Once in the winery the grapes are fermented in stainless steel tanks and then aged in new and used French oak barrels for 9 months before bottling. After another 9 months of ageing in the bottle the wine is deemed ready for release. Opulent aromas define the nose with intense blackberry, cassis and dark plum while the first sip reveals a generous full body, smooth tannins and very long finish with hints of cigar box spice. This full-throttled red is the iconic wine of Gianfranco Fino who began his search for the perfect vineyard site in Puglia in 2004. Keen to preserve the winemaking traditions and heritage of the region, he purchased a prime 2 hectare plot planted with 50 year old Primitivo vines and began to make wines that capture the true sunbaked essence of the Sava and Manduria countryside.

Set in a gorgeous corner of Salento surrounded by vineyards, olive trees and the Mediterranean Sea, Feudi Salentini specialises in delicious wines made according to local winemaking traditions. Today the estate is run by the third generation of the family represented by Cosimo and Maria Teresa Varvaglione who prioritise quality and attention to detail. Many of the vines are planted free-standing as they have been here for centuries and the grapes are harvested by hand to ensure they arrive at the winery in excellent condition. The grapes are then macerated and fermented in temperature controlled tanks and left to mature in a combination of French and American oak barrels for 10 months. The result is a luscious full bodied red wine with ample dark berry and cherry flavours seasoned with licorice, bitter chocolate, cinnamon and cloves from the oak ageing. The firm tannins, rounded texture, well-defined structure and juicy fruit flavours which linger on the tongue make this a great partner for rich meat stews, steak, or barbecued ribs. It can also be kept in the cellar for another few years where it will continue to evolve and develop.

Founded in 1994, in Leporano, the Feudi Salentini winery is located in one of the most beautiful areas of Salento, in Puglia, a region characterized by vineyards, centuries-old olive trees, and bathed by a crystalline sea. Here wine production is favored by the optimal climatic conditions guaranteed by the mild sea breeze that embraces the coast. In the vineyards, the vines are still Alberello trained and the grapes are hand-picked as tradition dictates. Feudi Salentini produces the two most emblematic vines of Puglia (Primitivo and Negramaro) but also white grape varieties that have shown excellent results, especially Verdeca and Malvasia. The Collection 53 Old Vines Primitivo di Manduria is produced with manually selected grapes from old vines cultivated according to ancient family traditions. The vinification and maceration take place at a controlled temperature of 26 ° - 28 ° C, and the wine is then left to refine in French and American oak barrels for at least 14 months. The resulting wine has a deep red color with intense purple hues. On the nose, the aromatic notes are intense and reminiscent of forest fruit jam. On the palate, the wine is round, warm and dense and perfectly expresses the terroir. It goes deliciously with game, red meat and aged cheeses.

Primitivio thrives in the hot, arid conditions of Italy’s southern Salento region and it is the flagship grape of most of the region’s boutique wineries like Attanasio in Manduria. The estate was founded in 2000 by Giuseppe Attanasio whose involvement with winemaking goes back more than six decades. Today he works 8 hectares of prime vineyards and produces just 15,000 bottles per year in total due to the harsh climate and tiny yields of his bush vines. Attanasio harvests all his grapes by hand to ensure they arrive at the winery in excellent condition and the wines are matured in his cellars beneath the estate’s 19th century palace. His Dolce Naturale is a sweet dessert wine expression of the Primitivo grape which is crafted from 40 year old vines and matured in oak for 12 months. Attanasio produces just 2000 bottles per year of this distinctive wine which pairs beautifully with chocolate, fruity desserts, and hard cheeses. On the nose there are intense hints of jammy dark berries, dark chocolate and cigar box. Imperio Primitivo di Manduria LXXIV is the flagship wine of Feudo Croci and was actually listed as one of Wine Spectator’s Top 100 Wines for both the 2014 and 2015 vintages. The wine is crafted from Puglia’s classic Primitivo di Manduria grape variety which grows in the Tinazzi family’s vineyards in Carosino. Once in the winery the grapes are crushed and destemmed before being left to macerate and ferment for 10-15 days. The young wine is then transferred to large French oak casks for 8-12 months of maturation.
